Our Story
Three generations, one block.
Mathew is a third-generation butcher, following his father David and grandfather Nicolas. He grew up perched on the old butcher's block out the back of his father's shop, watching beautiful things being made — including his grandfather's famous Maltese sausages and the sweet blood sausage, Mazzit, both still made by hand today.
Just down from the historic Newmarket Sale Yards, 308 Racecourse Road has been a European-style butcher for over fifty years. It became Mathew's home — and the craft has only grown since.
