We are at 308 Racecourse Road, just down from the historic Newmarket Sale Yards. The shop has been a European-style butcher for over fifty years. Come in, take a look at the counter, ask us anything. We are happy to talk through cuts, cook methods, what is in the dry-aging room this week, what just came off the bench.

Public holiday hours can change. If you are making a trip on a holiday, the safest move is to call ahead.

Getting here.

Flemington Racecourse station is a short walk, and the 57 tram runs along Racecourse Road. On-street parking is available out the front and on the surrounding streets. Saturday mornings are the busiest, plan accordingly.

Flemington, Newmarket and Kensington are the local walk. Plenty of people come from further out, from North Melbourne, Essendon and Footscray, and they are usually here for something specific: the Maltese sausages, a cut out of the dry-aging room, a ham at Christmas.

What to expect.

We are a working shop, not a deli counter with sandwiches. The counter runs the length of the room. The dry-aging room sits behind the back wall. Sausages are linked on the bench most mornings. The cabinet changes through the week as cuts come in, age out and get made up.

If you are not sure what you want, ask. We will talk you through it. If you have a recipe in mind, tell us what you are cooking and we will cut to suit. Larger orders, whole roasts, Christmas hams, porchetta for a table of ten, are best called in ahead so we have time to do them properly.

There is no online ordering. There is no cart. The shop is the experience.
